A common question I get. Q) how do you manage working as an RN and still living a clean eating healthy lifestyle?
My answer:
One of the biggest things is thinking outside of the box and getting creative with your food. I always suggest cooking in bulk so you have plenty of food made for the beginning of the week. No need to do dishes all the time, prepare and cook food daily. Just get it done once so you have more time to spend doing other things. This recipe is super easy to make a large quantity of, and they are easy and fast to eat. Pop them in your mouth on the go. No need for utensils either. Very kid friendly as well Or get fancy and put them with some Zucchini spaghetti and marinara sauce. A good source of protein as well as some complex carbs, fat, and fibrous veggies. - 1 lb of lean ground turkey
- 1/2 cup of dry quick oats
- 3 egg whites
- Whatever veggies you want just chopped (as much as you want really)
- Whatever spices you want
- For the Taco Mini-Muffins featured here, I used zucchini, onion and carrots for the veggies and cayenne, chili powder, onion and garlic powder, oregano, cumin, and red pepper flakes for the spices.
- Mix together all ingredients and place in muffin pan. Bake at 275 degrees for 40 mins.
