click here I used to prep a stove top and oven full of veggies on a daily basis. That is until my trainer Julie found out I was following her “unlimited” veggie rule way too well. I don’t think most people like veggies this much, but I could just eat them all the time. Zucchini and green beans are staples, and I love crunching on peppers at work. I barely touched salads and went for more flavorful options such as the sauteed zucchini and onions or green beans with Mrs. Dash or garlic salt! So what did I do the day after my last show, I ate pounds of zucchini – yep! Not a pizza, not a bowl of pasta, I wanted my zucchini. Weird. Yes! But I just love vegetables. I am indeed what I would call a Veggie Monster, but there are worse things. Now, I have a set plan that I stick to – I measure or count my vegetables, whether it be a half of a cup of mixed veggies or 3 cups, they are measured. However there is a little wiggle room on the plan, as one meal gives an example of a large salad with mixed vegetables…so vague..a large salad with mixed vegetables? I bet the stove top full of veggies could fit on top of a salad… Hmmm….I am guessing Julie and I may have different views of a large salad – I pack it in my typical Tupperware and hope it is acceptable!
