PUMPKIN UMP PUDDING – I am an UMP addict. To make UMP pudding I used 1 scoop of Vanilla UMP, 2 heaping tablespoons of pumpkin, 1/4 tsp of cinnamon and all spice, a very small splash of vanilla, 1 Splenda packet, and water to consistency. I also tried this with the Chocolate UMP and it’s pretty good as well. I have a decent amount of carbs in my life right now so I mixed in a 1/4 of dry oats, let it sit in the refrigerator for about 30 minutes and enjoyed. There are so many variations on this, and I know this is nothing too spectacular, but it’s a great change up and a tasty fall food.

My attempt at PUMPKIN PANCAKES AND ICING – So this is why I usually make waffles. My pancakes look a mess. However these were delicious and instead of syrup I used UMP icing. They are so good you really can just eat them plain, but I was feeling creative. My version of pancakes was 1/2 cup of egg whites, 1 scoop of vanilla UMP, 1/4 cup pumpkin, 1/4 tsp of cinnamon and all spice and water to make it a pancake like consistency. I made icing using a 1/2 scoop vanilla UMP and a few shakes of all spice and cinnamon and mixed with water to a thin consistency.
