So I was skeptical at how my turkey meatballs would turn out, but figured I would share. On the back of the Jennie-O Ground Turkey package I noticed a recipe for turkey meatballs.
Regular meatballs are delicious, but modified turkey meatballs?!?!
I like the turkey, so turning it into a meatball was a risk. But, I took it.
I mixed the package of ground turkey (99% lean) with a half a packet of taco seasoning and 1 egg. I then formed small meatballs and cooked them in a 13×9 pan at 350 degrees for about 45 minutes.
They actually turned out great! The entire pan is only 750 calories – aka 3-5 meals. I served them with salsa, making a tasty Mexican style meal! I think they would also be quite good with some grilled veggies like peppers or onions.
Of course to drink, I had to enjoy a margarita, Crystal Light style!
